I have officially added to my Mondays…I was supposed to start last week…and it was the ‘typical-day-in-the-life-of-erin” kind of day…get up early…have devotion…go for a run…hit the road with my mom for a day together before I started teaching…went out for lunch together…came home for about 20 minutes…left the house again…didn’t get home until 9pm…caught up on emails…went to bed…kind of day. Low and behold I forgot I told my mom I would start cooking on Monday nights. So on Tuesday, when I realized I forgot, my mom gets a random text from me saying…”Haha I realized I didn’t cook supper last night and totally forgot lol so no more forgetting it’s on my calendar for every Monday (followed by a ton of random smiley faces)”
Sooooo…my i-cal officially has “dinner” on every Monday. It’s just the way I roll…I won’t forget it now. I don’t mind cooking…I just don’t have the time…I’m either working or not home…or just simply don’t have to.
Soooo…fast forward a week…yesterday was Monday. I had planned out what I was cooking because…once again…it was a “typical-day-in-the-life-of-erin” kind of day…low and behold I don’t forget…I have it planned out!
I was trying to figure out how to make this task fun and something I can look forward to…ah-ha!!! I said “I can blog it!!!” Haha so hence the i-phone pictures thanks to instagram…I documented my new duty on Mondays!
2 lb. ground beef
BBQ Marinara Sauce (2 cups BBQ sauce and 2 cups Marinara Sauce)
2 large onions
4 ounces of cheese sauce
1 cup shredded Cheddar cheese
10 ounces cooked Rigatoni
1/2 cup Potato sticks
1/2 cup lettuce (shredded)
4 sliced Roma Tomatoes
3 pickles (slided)
Saute hamburger and onion until cooked.
Layer in your personal bowl:
Pasta, BBQ Marinara sauce, cheese sauce, garnish with cheese, pickles, lettuce, tomatoes, potato sticks and mustard (if you like).
