sixty hours in north carolina [my.life]

I’m sitting in my bed after a long day of work…with my laptop feeling inspired to blog…yeh it’s 10:11pm and I don’t know why I get inspired at this time of day…I really should be sleeping because in my book…sleeping is n.o.t. over-rated. Oh well I’ll crash in a few minutes…I’m feeling inspired to  do a little “my.life” post…even though this one post doesn’t do justice to what’s been happening over here lately…Anyway, I’m glad you are here…I often wonder where my readers are from, what brings them to my blog, what is going on in their little corner of the world.  Whatever it is, I’m so glad that you are here…I tend to ramble on…but most of the time I use this silly blog as a journal…so if you don’t read it…it really is fine with me!

This past weekend I spent a total of sixty hours in North Carolina…kind of strange thinking of it that way!  That seems shorter than saying ” I flew in Friday night and left Monday morning”…yet that is still a flying trip no doubt!  But no doubt it was perfect!   As I flew in on Friday night…I was so thankful for safety flying…after some of my flying experiences, I have to say I don’t m.i.n.d. flying, but it’s not my favorite thing ever.  After stuffing ourselves with yummy homemeade chili and homemade bread we decided to catch up on a little bit of life over some chocolate lava brownies with andies mint pieces inside…can I hear you say delicious?!?!  Yes…it was quite the dessert…late night…chocolate and catching up with friends are some of the best nights!

Saturday morning we packed a yummy lunch…hit the road on a two hour road trip headed to Asheville, NC to be tourists for the day at the Biltmore Estate.

Gorgeous day…beautiful place…tons of walking…lots of pictures… and two tired girls!  The Biltmore is quite breath-taking and gorgeous.  On the way inside we decided to get a bottle of water before our two hour tour of the house…that costs all of $3.00 a bottle—which spells…highway robbery!!!  Anyway you do what you have to do…on our way in to tour there is a HUGE sign that says ” NO Food, NO Drinks, NO cell phones, NO sketching, NO photography”  Well…Well…I assume it means no flash photography…so I just shot at the hip while inside…Ahhh what a photographer will do.  Sneaky sneaky sneaky…

We were ever so glad to be headed back to our car and be off of our screaming feet!!!

On our way back to Charlotte we decided to go to an Apple Orchard just for the fun of it…they were everywhere in this one little town of Henderson, NC…I had never been and neither had Christina…so we were up for adventure!  Good times…good times!  It definitely didn’t take long to pick a basket full…that’s for sure.

By this time we were starving and still had a 2 hour trip ahead of us…so we stopped in at a Hibachi Grill…stuffed ourselves but made it home two happy campers!  After crashing at their place we decided to skip out on a movie and just hit the bed…I think that was a good choice!!!

After church on Sunday morning we made some delicious Cheddar Cheese Broccoli  Soup…a recipe from Panera Bread’s soup…and I have to say it tasted just like it…but it should after all of that butter and heavy cream we added in there!  We decided to skip lunch…take a walk to get some fro-yo then eat with Nick, my friends husband, for dinner…well our fro-yo walk was supposed to be only “a mile and a half”…ended up a total of a five mile walk…yeh a little under estimated in Christina’s book but hey I could at least justify 7 ounces of some yummy-ness.  Spent the evening watching their wedding dvd…and Tangled for the first time! Eating guacamole and pita chips…hanging out and going to be early!

Monday morning we hit Starbucks on the way to the airport…I tried the new salted caramel mocha—-quite delicious I might say!  I made it through security at the airport with out a pat down or body scan- thank the Lord…had plenty of time to watch people…caught both flights and made it home safe and sound, thank the Lord!  I came home hitting the ground running…catching up on emails, texts, phone calls…editing…blogging…class on Monday night…teaching…and everything else in between!!!!!

  • Nikki Spreen - I have ALWAYS wanted to go apple picking! Looks like an awesome trip with lots of awesome pics! FYI…my girls LOOOVE tangeled! Can’t believe you are just now seeing it..I’ve only seen it oh a few hundered times! 🙂
